Pinot Nero Private Reserve
Grape variety: 100% Pinot Noir Riserva PRIVATE RESERVE
Description: This Pinot Noir shows the expression and character of the best grapes from the hillside vineyard at 500 metres above sea level. This Private Reserve is a very limited edition and is only available as a vinotheque bottling from the farm and not in the catering trade.
Location: Hill at 500 metres.
Soil: Clay and limestone soil.
Harvest: End of Sept. to beginning of October.
Yield: Around 50 hl/ha
Vinification: Destemming, traditional mash fermentation in large wooden barrels at a controlled temperature, but also partial fermentation in small wooden barrels with a proportion of stems. Juice extraction is carried out before the stormy fermentation to ensure optimum maceration and extraction on the skins. Once fermentation is complete, the wine is drawn off from the marc and stored in wooden barrels - mainly in tonneaux (500 litre wooden barrels) for further development + BSA for 18 months.
Shelf life: 10 - 15 years
Serving temperature: 16 - 18°C
